banana oatmeal cookies w/ cinnamon: minimal effort for maximum reward

A scale-able cookie recipe for those with blood sugar flux, those who “aren’t good at baking,” and anyone trying to use really old bananas.

Mix together: 1/2 cup of rolled oats per 1 very brown banana.

Bake at 350′ for 20-30 minutes, until lightly browned and delicious smelling. Eat right away for maximum goodness.

Variations: I like to add a good dusting of cinnamon (1/2 tsp?), up to 1 tsp of turbinado sugar only if the bananas weren’t completely brown, and a wee pinch of salt to bring out all the flavors. Sometimes I get crazy and throw in some chopped walnuts. Or chocolate chips. But almost never raisins, oddly, because I love them in oatmeal, and in oatmeal cookies, but these? No, ew. Anyway, the point is that this recipe can be as simple (or as complex) as you want it to be.

Technically adding some cinnamon, walnuts, and blueberries make these 5 ingredient cookies, but practically it was still a low-effort endeavor. Next time I may just go for broke and slice in some apple chunks, too.
